This hearty casserole takes the classic flavors of sloppy joes and transforms them into a comforting baked dish. Savory ground beef, tender vegetables, and a tangy sauce come together under a layer of crispy tater tots, making it an easy, family‑friendly dinner that’s perfect for busy weeknights.
Prepare the sauce. In a medium bowl, combine ⅔ cup ketchup, 1 tablespoon packed light brown sugar, 2 tablespoons Worcestershire sauce, ½ cup beef broth, ½ teaspoon mustard powder, and a pinch of salt and pepper. Stir until smooth and well blended. Set aside.
Preheat the oven to 375°F. In a large skillet over medium heat, add 1 tablespoon of olive oil. Add 1 diced bell pepper and 1 medium diced yellow onion, and sauté for 5–6 minutes, until softened and fragrant.
Add 1 pound of ground beef to the pepper-and-onion mixture. Cook, breaking it up as it browns, until no longer pink. Drain off any excess fat.
Add 8 ounces of sliced mushrooms and cook, stirring occasionally, until they soften and release their juices (about 4-5 minutes), then add 2 minced garlic cloves.
Stir 1 can of drained green beans into the skillet. Cook for a few minutes, stirring occasionally, until heated through.
Add the prepared sauce to the skillet and stir until well combined. Continue cooking for a few minutes, until the sauce has slightly reduced and thickened.
Spread mixture into a 2-quart casserole dish.


Place frozen tater tots on the casserole in rows. Bake uncovered at 375°F for 30–35 minutes, or until the top is golden brown. Rotate the dish halfway through baking for even color.


Once cooked, let the casserole cool for 10–15 minutes before serving.
